This plot of Chablis Grand Cru Bougros was planted in 1979 for a surface of 0.50 ha. The grape variety Chardonnay grafted on 41B produces lots of small grapes which mature well. These grapes keep good acidity which allows the wine to be well balanced with a good aging potential (the best is between 6 and 10 years).
Vinification is mostly in stainless steel tanks, sometimes in oak barrels with a maturing on the lees and bottling in September of the following year. At the moment 12 hectoliters are bottling each year, which represent around 1600 bottles.

We have 60% of Grenache and 40%of syrah, we produce around 30hl/ha (very small for CDR the average is around 45hl/ha…)
Only old vines (around 60years old) and Grenache are planted on a stony soil same as Châteauneuf-du-Pape, while Syrah are planted on a sandy soil for more softness and fruit. After alcoholic fermentation we put the wine during 4-6 month in big barrel named “Foudre” in French (60Hl).

This 2010 Chateauneuf-du-Pape “Montplaisir” is a rich and full wine with great upside as well as aging ability. It is a blend of grapes from the famed sector known as La Crau. It boasts a dense ruby/purple/plum color along with chewy kirsch, garrigue, pepper and lavender characteristics, medium to full body, excellent power and concentration and light to moderate tannins that should resolve in 1-3 years. This wine will drink nicely for 10-12 years.

The world's oldest sparkler is still made to this very day only in Limoux, under the strictest AOP rules. It has the lowest permitted maximum yield of any sparkling wine in Frane, and is made exclusively from hand-harvested grapes. Whole, unblemished grapes are pressed within two hours of harvesting. Each grape variety is vinified separately and fermented at 14 °C. in stainless steel vats with a second fermentation in the bottle. Yield: 45 hl/ha.

It was selected by one of the best sommeliers in the World, Andreas Larsson, as one of the top white Vins de Pays d'Oc. Named after the strong winds that blow through the Rhône valley, the Domaine Rouge-Bleu ‘Mistral’ grapes come from the oldest vines on the domaine, many of them over 75 years of age. With a deep purple color, there are aromas of red fruits and spices on the nose and the high concentration of fruit, typical of older vines, is complemented by a lengthy finish and lasting flavor. A gold medal winner at the 2008 Paris Agricultural show, it was recently given 91 points by Wine Spectator magazine.

The story and the name of this wine come from this tiny rocky block located inside a prehistoric river bed. This parcel is the last harvested and definitely the most qualitative even if located officially in a "Vin de Table" area. Winemaking took place in small porous concrete tanks in order to respect “terroir” diversity and allow air exchange during the fermentation, eventually permitting life and expressions of aromas. Lunatique comes from naturally farmed 77 year old Grenache vines. The wine achieved great balance of acidity, tannins and alcohol. This natural fine wine is complex and rich with hints of blackberry, anise and kirsch.

We elaborate this special cuvée only when the time is right to harvest our oldest Syrah grapes, slightly overmatured. The production is limited and reservations are posted long in advance. The terroir is mica-schist, vinification lasts 3 to 4 weeks with punching the cap. Then La Gourmande cuvée is aged during 12 months in french oak barrels. The robe is dense with hints of violette. The nose develops aromas of red and black fruit, cherry, chocolate and leather. The maturity of tannins, the musky touch of clove, mint and violet reveal an incredible wine. The finish is long and complex.

A spicy nose with reminders of moist turf. This full bodied red wine has loads of character to be unleashed after decanting for an hour or so. Given the blend, it is not surprising to find tannins in evidence, hence the need to decant for utmost enjoyment. Drink now and over the next six years.
